Steps to prepare Rogan Josh

500 grams mutton, preferably bone-in pieces

1 teaspoon cumin seeds

4 green cardamom pods

4 cloves

2-inch cinnamon stick

1 bay leaf

1 cup plain yogurt, whisked

Salt to taste

Step 1: Marinating the Mutton

In a mixing bowl, combine the mutton pieces with yogurt, ginger-garlic paste, and half of the Kashmiri red chili powder.

Mix well to ensure that the mutton is coated evenly with the marinade.

Cover the bowl and let it marinate for at least 2 hours, or preferably overnight in the refrigerator. This will help to tenderize the meat and infuse it with the flavors.

Step 2: Cooking the Rogan Josh

Heat the vegetable oil in a large, heavy-bottomed pan or a Dutch oven over medium heat.

Add the fennel seeds, cumin seeds, green cardamom pods, cloves, cinnamon stick, and bay leaf.

Sauté the spices for a minute until they release their aroma and turn slightly darker.
