Marinate Prawns
- 500 g of gutted and deveined prawns
- One mug of yoghurt (curd)
- One tablespoon of pulverized turmeric
- Red chilli greasepaint, 1 tablespoon
- One tablespoon of garam masala
- 1 teaspoon of garlic-gusto paste (ginger-garlic)
- Salt to taste.
Prawns are marinated deeply to achieve a rich taste and aroma by combining a list of ingredients, including yoghurt, turmeric, red chilli powder, garam masala, garlic and ginger paste, and salt as required. The measurement given should be noted properly to give a correct texture with an aromatic blend.
Regarding the rice
- Soak 2 cups of basmati rice for 15 minutes
- Four mugs of water
- Four cloves, three cardamom capsules, star anise, mace, nutmeg, two bay leaves, and one cinnamon stick
- Pinch of Salt
Rice should be soaked properly for only 15 minutes to get fluffy and non-sticky rice, which is combined with spices such as cloves, cardamom, star anise, nutmeg, mace, bay leaves, and cinnamon sticks to enhance the taste of biryani. Rice should be boiled gently without hardly any stirring and taken out as half-boiled.
Regarding the base of prawn biryani
- Three spoons of oil painting or ghee (either homemade or readily available at supermarkets)
- Two sliced onions and two diced tomatoes
- Three green chillies
- One tablespoon each of cumin seeds, coriander seeds, and biryani masala
- Mint and coriander leaves
- As a garnish, a mug of milk with saffron added, Half a mug of fried onions
The biryani base should also be done by adding 3 spoons of ghee, followed by onions, tomatoes, and green chillies. A combination of onions, tomatoes, and chillies gives an add-on to the base of biryani. A blend of cumin, coriander, and biryani masala enriches the flavour of biryani, which is then combined with mint and coriander leaves. Finally, adding saffron and milk with fried onions makes the biryani colourful.

- Boil water and add rice to cook, as well as salt, bay leaves, cardamom, cloves, and cinnamon.
