List of Ingredients Needed:
Marinate Prawns
- 500g of gutted and deveined prawns
- One mug of yoghurt
- One tablespoon of pulverized turmeric
- Red chilli greasepaint, 1 tablespoon
- One tablespoon of garam masala
- 1 teaspoon of garlic-gusto paste
- Salt to taste.
Regarding the rice
- Soak 2 cups of basmati rice for 15 minutes
- Four mugs of water
- Four cloves, three cardamom capsules, two bay leaves, and one cinnamon stick
- Pinch of Salt
Regarding the base of biryani
- Three spoons of oil painting or ghee
- Two sliced onions and two diced tomatoes
- Three green chillies
- One tablespoon each of cumin seeds, coriander seeds, and biryani masala
- Mint and coriander leaves
- As a garnish, mug milk with saffron added, Half a mug of fried onions
Cooking Instructions
- Mix prawns, yogurt, and seasonings to marinate the prawns.
- Let it marinate for half an hour.
- Boil water and add rice to cook, as well as salt, bay leaves, cardamom, cloves, and cinnamon.
- 70% cook the basmati rice.
- Base preparation involves sautéing onions in ghee.
- Add the spices, tomatoes, chiles, and cumin. Cook until tender.
- Cook for 5 to 7 minutes after adding the prawns.
- Add the mint and coriander
To make it a layered biryani, follow only 2 steps:
- In a pot, alternately layer the rice and prawn mixture
- Top with saffron milk and fried onions on top of each layer
